If you like sweet potato pie, you'll absolutely love these pancakes!! A yummy twist on traditional fluffy pancakes that everyone in your family will enjoy!
Ingredients:
For the pancakes
1 cup self rising flour
1 cup milk
1 egg
2 Tbsp melted butter
1/2 cup cooled and mashed cooked sweet potato
2 Tbsp brown sugar
1 tsp cinnamon
1 tsp vanilla extract
1/4 tsp ground nutmeg
For the sausage
1 Pound ground turkey
1/4 cup maple syrup
1/2 Tbsp ground sage
1/2 Tbsp salt
1 tsp black pepper
1 tsp crushed red pepper flake
1 tsp dried thyme
1 tsp dried oregano
2 tsp garlic powder
1 tsp onion powder
Directions:
1. Preheat a non stick frying pan or griddle over medium heat.
2. Mix together all of the ingredients for the sausage in a large mixing bowl.
3. Form either patties or links
4. Fry for about 3-5 minutes per side depending on how thick the sausages are.
5. Set the sausages aside and clean the frying pan/ griddle
6. Return to medium heat
7. Mix all of the ingredients for the pancakes together in a large mixing bowl.
8. Pour about 1/4 cup of the batter at a time onto the frying pan and cook until bubbles form on the top, then carefully flip and cook the other side about 2 minutes or until golden brown. You should get about 6 to 8 pancakes depending on how big you make them.
9. Serve with warm pancake or maple syrup and add mini marshmallows, fresh fruit, and your favorite kind of granola if you want to make it extra special!
